What should not be missed? What roads should I take that are most scenic?
Unfortunately the "most scenic" may be the least drivable at that time. The most direct route is across the eastern plains where even there roads can be tricky depending on storm timing - I-25 to Las Vegas, thence to Vaughn, Roswell, Artesia, Carlsbad. A longer drive, but probably safer if weather is bad, would be I-25 to I-10 and via El Paso and US-180 to Carlsbad.
Jaxart is right. I thought about posting U.S. hwy 285 which goes from Denver to Fairplay, the San Luis Valley, and northern New Mexico to Santa Fe, (lots of mountains), then the last 175-200 miles through the plains to Vaughn, Roswell, and Carlsbad. One problem-snow! And this area got hammered a few days ago (not sure of N.M.)
Double H is right; 285 would be a beautiful run, but you'd best make sure about
weather conditions for that entire route before setting off and have a backup
plan in place.
