The top one, of the towns I have lived in is Taos. I really couldn’t comment on towns I have spent a night or two in let alone the hundreds I haven’t visited at all.

What is the upper population limit for what constitutes a "town" for the purpose of this poll? Or are you including all census designated places including larger cities like Albuquerque, Santa Fe, and Las Cruces?

Born 'n raised here, so that's gotta factor, but this town has more to offer than the rest of NM combined. It's definitely got its drawbacks, but it's easily the most livable.
Las Cruces
Isn't trying to be Albuquerque in the '60s, but in many ways pulls it off to marvelous effect. Milder winters, young, and ambitious, and just nice.
Los Alamos
Can't stand the weather, but if you like snow... Rich with history, landscape, and well-paid with the local company.
Bottom 3:
Las Vegas
Easily the most brutal weather of any populated place in the state. The locals are grumpy, scary, and very slow (in how they move and talk). Motorists here are the worst in the state, driving 15mph under the speed limit but not stopping at stop signs. They drive to Santa Fe frequently and that's one reason Santa Fe drivers are so horrible. I don't know if it's something in the water, but this place, very historic and in ways very pretty, is at the bottom of my list.
Roswell
Once the alien museum kitsch wears off after 30 minutes, you realize this town is expensive because of oil patch and government work 45 minutes away both paying stupid money, but all those people want to live (and rent) here. Imagine Central from Tramway to Coors with no I-40 as relief, so traffic is actually quite severe for a town its size. Not everybody here is racist, or prejudiced, or considers themselves God's chosen, but the proportions are high enough that I didn't miss living in CTR.
Santa Fe
Many of the locals are surly and cruel, the traffic like a self-inflicted knife wound, and the housing prices way inflated. It's like Juarez zoning combined with California prices. I feel less free in Santa Fe than any other place in the state. Meow Wolf and Violet Crown can't make up for the rest of the steaming pile, I'm afraid.
