I haven't seen all of NM, but to me, the most "New Mexican" places I have been are Mora, Guadalupita, Cerro, and the little towns on the roads SE of Albuquerque (Manzano, etc.). I rode my motorcycle through the latter several years ago and it was almost surreal, like being in another time and place entirely. I love all those places.
