I am the naysayer here about Hunt For Red October, which I thought was just awful. Don’t ask me why? I blotted it out of my mind, but remember being simultaneously annoyed and bored when I saw it. I cannot stand Tom Clancy stuff.
Das Boot, Destination Tokyo, and Run Silent Run Deep are the gold standards for submarine flicks, though I would also add in The Bedford Incident if you want to consider that.

I think the U Boat #853 off Block Island RI. In 130 feet is the same class as the sub in Das Boot.I have lead dive trips to it numerous times.
Interesting back story to its sinking near the end of the war.The remains of the crew is still there..
In this same vein, I would add The Balance of Terror episode from the original Star Trek. I know it's not a movie, nor is it about submarines, but it's inspired by a submarine movie.
