Short answer - yes absolutely you need a temporary work permit.

You will need to factor at least 1-3 months of application time, and during that time you cannot take up employment in Canada.

You might try Tim Hortons for a job in your pastry profession. =

Is it really worth it to move to Montreal to work at Tim Hortons?

My grandfather was a baker. The OP is a PASTRY CHEF. Big difference.

Anyway, the OP said that he may already have a job offer. He's just looking for advice re: the work permit since his potential employers don't know how it works. A big corporation would know so I'm guessing (hoping) that the job offer is from a patisserie.

Here's info about a Canadian temporary work permit: Work in Canada temporarily
Here's info about Canadian work permits in general: http://www.cic.gc.ca/EnGLish/work/index.asp

Best of luck!

Where did you see the OP say that she wants to immerse herself in French culture? She wants to be a pastry chef in Montreal. Full stop.

I just looked at your profile, OP, so please mentally replace "he" with "she" and "his" with "her" everywhere in my previous post.

There are so many fine patisseries in Montreal. I hope that the owners who you speak of own one of those! *drool*
