The Grand Canyon is 6 hours drive, seems a bit far unless you have a lot of time. I like hiking at Red Rock Canyon though part of it was closed due to a recent flooding. If you can, time your trip to avoid big events like conferences and trade shows. I have seen a decent, reasonable hotel like the Monte Carlo go up to over $200/night and the same room be as low as $69 two weeks later.

i should have mentioned Cirque du Soleil. I have seen several shows there at various locations such as the Mirage and Treasure Island, and they are all great.
February 24-26th is one of the bigger events, and another March 1-5, each with over 5,000 people. Also a few others with 2,000 or so. If you overlap these, get the reservations early, prices will go up as it gets closer and they start to fill up.
Try Monte Carlo and Mirage, both are normally reasonable, with good service and access to good restaurants inside and nearby.

Monte Carlo I would advise against since they have a massive construction project underway called The Park. It won't be finished until Spring of 2016. To leave the M.C. by cab costs a lot more these days for each ride because our normal exit is blocked off. They are building a sports arena behind M.C and NYNY which I'm sure also produces plenty of noise as well... Anyways, it's just a mess back there. Mirage is a good option... Aria, Cosmo, Venetian and Palazzo are all a bit overpriced and snooty... And the center of the Strip can become insanely congested. So yeah, Mirage is nice.
Are you renting a car?
If you are staying a full week, it might be something to consider. There are several nice areas in Vegas that a lot of visitors don't get to experience because without transportation, they are tied to the Strip.
If you get a car, check out Red Rock. Valley of Fire is gorgeous as well.
The High Roller observation wheel has been a hit so far. Provides some amazing views of the city.

Get your rooms reserved NOW - you'll be here pretty darn close to NASCAR week, when the prices go thru the roof!!! My personal favorite spot is Silverton, not on the strip so you miss most of the traffic & also not too terribly expensive.
