I'd say it depends on the quality of the fake ID. If you have one from one of the fake ID shops in China, you're probably good to go. Anything less, you run a slight risk.

For the good fakes, the only way to find out that it is invalid is to check with the DMV. And how many bars do that?

While I'm not advocating trying to get away with using a fake ID, my experience is that it may depend more on the people you are with. Last year I went to Vegas with a group of friends and most of us were in our mid to late 30's but one of the guys brought his 20 year old girlfriend along (we didn't know her age until after the trip had be planned) who had a fake ID. One day on the trip we rented a cabana and the waitress didn't even think to card her when she ordered a drink. My theory is waitress just assumed that she was older because of who she was with.
