Some of the casino buffets have a Mexican section, but it usually does not have a real big selection.

The best Mexican restaurants are off Strip throughout the city. Will you have a car?

I suppose there are occasional exceptions like the Mexican food I have had at the Orleans and the Rio buffets, but Mexican food in a buffet is quite often bland at best, horrific at worst. Unfortunately for your request, the best option is gone as Gardunos in the Palms closed. They had a decent weekend all you can eat brunch offering of New Mexican food. I have heard the Michoacan restaurants have the same kind of offering, but have never made it to one. They have quite good food, if they indeed have an all you can eat weekend deal that probably would be your best choice but they are all quite a ways off the Strip.

Not a buffet but I had a pretty good meal at Diablo's Cantina on the strip. But I just wanted the giant margarita glass to take home (I have a chihuahua named Diablo).

Go to Border Grille at Mandalay Bay on Sunday, the weekend brunch with unlimited tropical Mimosas and stuff made to order off a menu (unlimited) was great...search it online or check yelp.
