I looked at a for sale home in Doe Valley and was very disappointed that it was a 45 to 50 minute drive to Louisville. Are there any other neighborhoods closer to Louisville that are similar? I like the community amenities (trails, pool, park, common areas). They are a lot like a neighborhood in Prospect that I read about. It had community horse stables, a fishing lake, a park, pool, etc. I'm not in a financial position to afford a large house in Prospect, unless someone here knows of a very good foreclosure agent! I can afford 150K-200K. Are these the only two developments of their kind?

No, of course not, they are all over. 200k is a little low to expect those amenities, though. If you want access to all that, you are most likely looking at a patio home in of of these communites. One you may want to look at is:

Generally, it is more affordable south and southeast of Louisville, so that is where you will need to look for that type of lifestyle. The east and ne suburbs are very $ for this region anyways. You may also want to consider the north suburbs, which are in Indiana. You are looking for exurban living, which is not my realm of expertise, so maybe someone else may chime in. I focus mainly on the urban and inner ring suburban areas of Louisville.
