There are a lot of great inner loop areas to explore, and I'm sure others will give you some good ideas, so I'll throw this one out there, because I don't think others will: Riverside Terrace. I don't live there, but can access it via the columbia tap bike trail that the city recently finished (runs from east downtown to the Hermann Park area). It has some hills (especially in the Parkside section) and some impressive (and dilapidated) old homes, a good dose of mid-century modern, and some new construction on small and massive lots (around MacGregor). What I like best is that, since you are biking, you are going slow enough to notice the details and people of the area (both bad and good).

There're 2 parks specifically designed for long bike rides:

Memorial Park
Memorial Park, Houston - Wikipedia, the free encyclopedia

There is an around 3-mile loop for cross-country bikes and a few 2 mile loops for mountain bikes.

Terry Hershey Park
Trails and Parks > Maps > The Energy Corridor District (http://www.energycorridor.org/maps/trails-parks.aspx - broken link)
Terry offers the longest asphalt trail in the city, which is 10 miles + 5 more connected miles through the I-6 area.
