I am a European living in Houston as well and I can say that the food will be the least of your problems.
Although I have no problems with eating meat, all kinds of vegetarian food will also be within your reach.

Some other things might be very different though.
I think Northeast is more similar to the European cities but here in Texas there will be many changes.

The major difference will be the time you spend inside your car.
There are excellent restaurants, activities and entertainment here but you will need your car to go from one to another for sure. And there is not much place to walk around. If you are used to the spontaneous decisions for fun, such as seeing a cafe and stopping for something to drink while walking around- window shopping, it is almost never possible here. You have to have your plans beforehand and go by car. Before you leave your house, you know you will first go to the grocery shop, then drive to a restaurant you like and finally go to the movies. Yes, they are all available here but it is a different set-up.

Couldn't have said it better myself.But...Better sharpen up on your shotgun and rifle skills. Those plants are fast movers.

You do know our grocery stores sell FRESH vegetables right? If you go to certain ones you can get stuff from other countries too. You can even go to the farmers market and get even FRESHER vegetables.

Vegetarianism is a lot more ingrained in the US than europe. As a vegetarian I have a hard time over there. Not in Houston

Houston is way easier for vegetarians than austin (someone said otherwise)

I've never lived in Austin but I visit every year. The reason I thought Austin is better for vegetarians is that 1. there seems to be more vegetarian only restaurants in the central, busy part of Austin compared to Houston and 2. almost every restaurant in Austin (and food trucks) I tried in Austin has a signature vegetarian dish, even though the establishment is not vegetarian per se. In Houston many restaurants that don't cater specifically to vegetarians don't have good vegetarian options besides side dishes.
