I hope the 'bigger' mentality doesn't hurt as people at times prefer the longer waits and less ambiance

Actually, that is a valid point. I think that some places benefit from the concept of "limited".

I have not tried Gatlin's yet because of the long wait time. I love great BBQ, but only a moron would stand in line for an hour for food. There is absolutely no food on earth worth waiting an hour to eat. Especially not in the city of Houston where great restaurants are on just about every street corner.

That may just be me, but my time is infinitely more valuable than a few thousand calories of smoked/charred meat. I can do the same thing in my own backyard for cheaper with satisfactory results and be surrounded by friends/family -- not idiots who love standing in line.

That said, I am ready to try Gatlin's if there is no overly outrageous wait.

And if quality goes down due to serving more people, it will be no loss to me. Remember, no food is worth an hour's wait.

I've heard you can order ahead by phone and come 30-45 minutes later to pick up...can anybody confirm that?

I can confirm it because as a walk-in customer in the past, they were working hard filling the phone in orders.

It's definitely good BBQ, but it isn't Franklin's or La Barbecue.
