Go to Midtown and take the train to the stadium. Coaches or Barcadia will work which are walking distance. I can't think if any sports bars in the immediate Reliant area.

Best yet, just go tailgaiting.

I currently stay on Stella Link, pretty close to Reliant and I don't know any good sports bars in the area. Most of the bars near here are in some Chain restaurant like Joe's, Chachos, Pappsitos, Pappadeaux's. Danny's Porch may be an option. Haven't tried it yet.
The other poster mentioned midtown and the train. That sounds like a good option.

but honestly in Texas establishments aren't allowed to sell alcohol until noon on Sundays(thanks a lot Jesus). So its unlikely a sports bar would be open before the game, right?

There are many restaurant/bars like the Pappas chain, but otherwise not much around there I'd recommend. The Sunday issue is a problem. Many places open at 11, and MAY serve booze before noon IF you have food with it. Tailgating is the best plan, but Barcadia/Reef or Leons Lounge off McGowan may be a better plan...of one of the downtown bars off Main...cant remember name but Irish themed.
