It's just a door like any other, they work the same, keep dust out of the cabinets, etc.... The downsides are cost, PITA to keep clean, potential for breaking...
My folks have some in their kitchen, though they put custom stained glass in them (was my mom's "retirement" business for almost a decade). While not the WHOLE kitchen, they make for really nice accents. Anyway, you wouldn't know they were glass based just on feel/function.

You forgot the part about keeping the "stuff" inside neat and orderly, which can be problematic for some folks.
Some of our upper cabinets have glass in their doors. They display glass artworks. Those cabinets are too high for everyday use, so we use in them lieu of shelves. Saves dusting the artwork, too.
Looks nice on a set but in reality I think they are less practical, especially if the kitchen were small because the cabinets would be packed. And all that glass to clean.
Just go open all your cabinet doors and step back. Then think of what your mother-in-law would say.

Well, there are two problems to this approach.
First of all, we are talking about a house that is not built yet, that is in its blue print drawing stage. So by the time all the cabinets are open, it's too late; the decision has been made.
I like a mix of solid and glass where the glass ones are used to display nice dinner/serving/glassware, but otherwise nope. I don't want the entire contents of my kitchen cabinets on permanent display, nor do I want to have to be cleaning all that glass periodically because of dust, finger prints and kitchen grease.
The motivation is that many people think they look nice. The downside is that they don't hide anything and especially for those of us with people in our lives who have opinions, that's a downside.
