I think fallingwater has the right idea about going with a lighter countertop. An example would be the last picture on the houzz link.

Rushmore Painted Maple Butterscotch Glaze ( yellow tone) but as I was reading a blog they said that they had seen the 2.Rushmore Painted Maple Hazelnut Glaze (brown tone) in another model home and liked that better.

Rushmore Cabinets: Specs & Features | Timberlake Cabinetry

I have not seen the hazelnut glaze so I can't comment on them, but I saw thw Buterscothc glaze and liked it. It was not with black granite which is good becuase I was originally thinking of going with black now I think I will go with the one I saw in the model home, just can't remeber what it was called.

As far as the other rooms we would be painting them eventually but for now it will be white.

The floor we are thinking will be dark oak hardwood, dont know the exact color yet. Is the off white cabinets easy to maintain.

My cabinets are almost exactly the color of the ones in the link. I've have no issue keeping them clean by just wiping them with a damp cloth as needed. Of course, I no longer have any kids at home so mine naturally stay a lot cleaner than they used to! I like the look of them since they're not as stark as white, but still keep the kitchen light and bright. I also like the warm tone of these cabinets as opposed to the cool tone of white. They just blend better with the furnishings in the den and breakfast room that are open to the kitchen.

Yep, my kitchen has the off-white painted cabinets, looks very warm and inviting. Easy to keep clean.

I'm doing toasted antique kitchen cabinets, with brown/tan granite and dark hardwoods floors.

I had black countertops and hated them! I replaced them with a "venetian gold" granite (gold, black, garnet, cream, brown mixture). Black is so hard to keep clean! Every crumb, grain of salt and sugar shows up (as do dried water marks).
I would imagine a dark floor is hard to keep clean for the same reasons. Just my 2 cents. Good luck.
