Fair enough, we're talking about national recognition here and it's brat-mania throughout the state, though in-state most would list Sheboygan. Brat soaked in beer & onions, grilled, and served with mustard & sauerkraut on a Sheboygan hard roll = the beating heart of US bratwurst. That's where the best-known brat brand in the country (Johnsonville) is made, though you can find better in pretty much every city in the state.

St Louis I'd go with the gross localized pizza they serve with the weird cheese. So many choices for Chicago & NOLA & San Fran...

ABQ/Santa Fe.....New Mexican, e.g. Green chile burgers, posole, sopapillas, carne adovada, Red or Green or Christmas chile, etc.

Buffalo - chicken wings, beef on weck, anything served "Buffalo style" (hot sauce and bleu cheese), pastry hearts, loganberry pop

Garbage Plates originated at Nick Tahou's restaurant in Rochester. This entry explains what it is: Garbage Plates - Rochester Wiki

I got it with cheeseburger, tater tots, ketchup and beans before at a place in Syracuse.
