It'll be fine. Or leave it a few more days and youll get ham. My corned beef recipe is in the brine for 2 weeks and that is delicious. Although, beef does last a lot longer than pork does before going off.

Like the others, I assume the meat is marinating chilled in the refrjgefator. I wouldn't let it sit out warm.

I often marinate for 24 hours, pork, chicken, beef, it's all good.

Cooks note: do not use that packaged marinade that contains meat tenderizer. Or if you do, follow package directions and don't marinate longer than the package says.
