Due to both recent and upcoming travel, our fridge is pretty empty, but I managed to find a small amount of chorizo and some tater tots in the freezer, a few eggs, an onion, and a can of Rotel tomatoes, which became a surprisingly delicious and satisfying Mexican scrambled egg bowl that I topped with crumbled queso fresco and finely-chopped herbs from the garden.
