I first tasted Tiger Nuts when I lived in London. In Spain they are known as Chufa nuts. When I moved to the US no one had ever heard of them and I have been searching the internet hoping to find them.
Well, I finally found a source for them. They are a gluten-free, high-fiber snack with a sweet nutty flavor. They aren't actually a nut at all - they are the tubers of a nut sedge.
"Perfect for people who are diabetic?" I don't think so...
I love corn nuts, and they are bad for people, too. I still eat them!
