Well thank you all for the encouragement--the chicken turned out pretty darn good!! I'd probably make it again if I could remember what all I put in it! I was pleasantly suprised.
I made the chicken alfredo last night. It was "ok". I forgot to buy the garlic cloves - so I was going to use garlic powder until we realized we didn't have any. Not too bad though. The chicken - I just sauteed it in butter, but it was really dry - so I'll have to figure out another way.
Tonite - we fend for ourselves (again) - my daughter has another game so we won't be home until 7:30 or so.
We had polish comfort food* last night, don't know yet what we will have tonight.
*Kapusta: a pork loin browned then braised for hours with saurkraut onion, shredded cabbage, a little brown sugar, and potatoes and carrots added the last 30 mins till done. The meat is so tenderized, and the cabbage and saurkraut so mellow the fragrance is a bit intense, but smells wonderful to me. (and I'm not Polish)
That sounds great to me! I'm trying something sorta like that tonight....another new recipe for me at my husbands request! I'm making German Sauerkraut and country ribs. Love that sauerkraut!! I'm adding some beer to cook it in, again, my husbands idea. I will cook it for about 3 hours and serve it with mashed potatoes. The recipe says to put in caraway seeds, celery seeds (think I'll just cut up some fresh celery leaves since I don't have celery seeds), salt and pepper. It also said to add barley but I'm not to excited about that so that's where the bit of beer will go instead. I know the barley is a grain but it's the flavor I'm looking for. So once again---wish me luck. See what ya'll are doing to me? You're actually helping me to try all these new things. This is more then I could have ever hoped for!!
