Thinking about mixing up some salmon salad from canned salmon--like to add interesting things to it and make it yummy. Have been adding Dijon mustard and a big tablespoon of green pickle relish as well as chopped onion, celery and carrots...sometimes put in chopped apples and walnuts..just a tad of mayo....
Elston, carrots are no harm! Infact many people use them while trying to lose weight so enjoy everything. Sounds wonderful!
On the south beach diet....they (carrots) were considered like having sugar...but I am not on South Beach. I just went out to walk and walked twice as far as I usually do.....I think the loop in my subdivision is a full mile...and its up and down hill.... I feel great.....it was cold and blustery and I wore gloves and a scarf and felt ever so healthy and virtuous.
I am making Creole for tonight. Shrimp Creole for me and Chicken Creole for DH, who isn't a big seafood fan. The chicken is already cooked, so it's a quick fix. Both will be served over rice.
1 tablespoon vegetable oil
1 medium onion, chopped
2 dashes cayenne pepper
pinch thyme leaves, crumbled
2 bay leaves
6 to 8 green onions, chopped (I am only using 4)
1 can (14.5 ounces) tomatoes, undrained (I use stewed tomatoes)
1 small can tomato paste
1 green bell pepper, thinly sliced
Heat oil. Saute veggies & spices until the veggies are tender. Add tomatoes and tomato paste. Simmer for 15 minutes.
Then I'll divide into two saucepans and add raw shrimp to one and the chicken to the other. Simmer the chicken til heated through and the shrirmp approx. 10 minutes.

I am with you Elston. I love feeling virtuous. I have always been sedentary and love to cook and eat. Oy.
I have been going to the YMCA gym 2-4 mornings a week (we're shooting for 4 every week, but you know....) and trying to make healthier choices as many meals as I can. I have been really good today so far!
Yogurt breakfast, lentil-spinach soup and huge salad (easy dressing) from Whole Foods salad bar for lunch. Boy did that lunch break the bank though! All I have to do is keep in control tonight, that's the hard part.
I actually have begun "sort of" enjoying the gym, for the first time in my life.
And I am signing up for the turkey trot this year, another first. I am excited about that! It's a 3 mile run (I'm walking) in downtown Dallas. I am glad to do something healthy on Thanksgiving for a change, but then I'm eating all the trimmings, that's OK, right?
Oh no--the four letter word????? Gee lucey, it seems a bit early! That is why hubby decided to move here! That is a very unusual word here! Frost and Ice are common but no four letter words here!
