How many hens do you have?

If you have more than one and you're getting too many eggs, you could fry up one of the hens.

We have 3, and I really hate the idea of sacrificing one of them to the pan at this point, we had a REALLY hard time getting them raised.
One of my good girlfriends in Sainte Genevieve just sent me a recipe to dill-pickle them, so I am gonna try that, and share the rest with friends, as well as try some of the ideas here. Eggs are such an excellent, cheap source of protein, I think our diet could stand the inclusion.
Imagine when the ducks and geese start laying, lol!
Bobcats or coons got into the rest, we started with over a dozen, all the roosters are gone, so no chicks for me this year.

We have 13 hens. We had 14, but she just passsed away Friday.
Five of those were pullets this Spring, so those 5 are busy making their Mama (me) very happy.
2 of the older ones are in molt, so they won't be laying for awhile.
The others lay almost every day.

I put a lot of hard boiled eggs in tuna salad, chicken salad, potato salad & make deviled eggs.(the usual stuff)

We pretty much give ours away to family & neighbors.
I even give the chickens some of their own eggs. Sometimes raw.
Sometimes I'll scramble a bunch of them up (a dozen or so) add the egg shells to them & give as a treat to the chickens. THEY LOVE'EM.
Sometimes I scramble some eggs (without the shells) to the Rotts. They LOVE'EM. TOO.

In case it isn't very clear.... Our chickens are spoiled... our dogs are spoiled... our neighbors & family are spoiled.
