One of the reasons I don't like wearing a suit is because when I wear a suit and tie, I don't like the restrictive feeling of the tie and buttoned-up collar around my neck.

When getting fitted for a suit, what if I ask the clerk/tailor to purposefully fit me a shirt that is 2 neck sizes bigger?

Would this look weird when wearing the suit in public, or would it be barely noticeable?

Ask the tailor how to solve this issue.

I'm sure there is a happy medium. For sure, you shouldn't be uncomfortable in your clothes.

imo, 2 neck sizes bigger would be a noticeable, sloppy difference - depending on how the rest of the shirt was done.

Go to a tailor and get PROPERLY fitted for a shirt. Please do not go and buy and off-the-rack shirt 2 neck sizes bigger. Get custom measurements for your waist, arms, neck, chest etc. If it fits properly, it shouldn't be restrictive.

Definitely NOT appropriate to have a huge neck collar on a dress shirt. I saw an advertisement on TV recently for an expandable dress shirt collar. I think it was called a Flex Collar and was a Van Heusen product.

Yeah, having a shirt with a collar that is an inch bigger than it should be will be noticeable and it WILL look bad/sloppy.

I'm betting you're currently wearing shirts with collars that are too small. Go to a decent store, or better yet a tailor, and get fitted for the correct size shirt and jacket.

You can have shirts custom made so that the collars fit right. My husband should have that done, because he has a very thick neck for an average-sized man. But he only wears a shirt and tie a couple times a year, so it's not worth the trouble. Instead, he uses something like this: Wonder Button Collar Extenders at Amazon Men I made my own by tying thick, clear bracelet string (the stretch kind) onto a spare shirt button.

Or you could buy a shirt with a neck size (and sleeve length) that fits, then just have the body of the shirt tailored to fit.

2 sizes would be noticeable. As mentioned, a properly fitting one (as measured by a tailor) should be fine, but some people just have a thing about it.

To them, I say that MAYBE 1 size larger is the most you could go (and keep in mind that they measure the body of the shirt by the neck size, so larger neck = larger body and you may be swimming in it), or you could get a "collar extender", a little piece of plastic that buys you another half inch or so by connecting the top 2 buttons.
