I completely regret my decision in getting a degree in the arts (journalism) and have been thinking about going back to school for a graduate degree in the sciences. Is this even possible? Or did I basically ruin my life and lock myself into the arts forever?

It is against the law to back to school for a graduate degree in the sciences if you earned a BA in the arts (journalism).
Why a graduate degree in the sciences? Why not a nursing or engineering or other practical undergrad degree?
Well, I already have a 4-year degree, so I'm not sure I want to go through the whole undergrad thing again. A graduate degree seems to be the logical route, many of which can be completed in 2 years.
I'm looking into an MS because one of my main interests is computing. Though in terms of a steady career, it seems like the way to go is something that involves healthcare and technology. An MHA (Masters in Health Administration) seems sensible, but my original studies seem so far from that.

You need some imagination. A person who is a skilled writer can do quite well in the world as long as he is willing to think entrepreneurially. I'm 51, haven't picked up a paycheck from anyone in twenty years, and earn in the six figures.
What do you think a MS in science is going to do for you? Since you have a journalism degree, I think that you would need to take a lot of science pre-reqs before you even begin a graduate science program.
You would only take a few upper division prereqs. Depends on the major and what you took as an undergrad, but probably no more than two semesters worth. As long as you stay on track with your thesis development, you could still easily finish in 3 years or less despite the extra courses. If you are under an RA or TA, your tuition remission could cover the undergrad courses (I would say "should", but there may be universities who handle that differently). Sometimes departments will give you an extra year of TA as well if you have to do extra prereq courses that lengthen your course of study.

No idea why you would regret that. Almost every communications person I worked with started in journalism, and there is need for good communications people in every industry.
If you "completely" regret your BA then anything else you do might end up the same way. There is a defeatist attitude in what you say and probably the way you think about things.
I'd address that first before engaging in another educational venture that you might also completely regret.
Education should never be a regret, regardless of the subject matter. If you regret your BA in Journalism that is like saying you don't value it at all. That is a rather sad commentary isn't it?
