I'm looking for some of those 'University of phoenix' like nontraditional semesters. (4-5 weeks per class)

Pretty much any state accreted school will be accepted -I checked, but they couldn't give me any leads (I just want to take a math class and a couple other basics to keep to my timetable.)

School will accept University of Phoenix, but that's too expensive for my GI bill I believe.

Anybody know of any they would recommend? (I can google, but wondering about quality)

Stay far away from the online for profits. They are mostly scams.

I think my daughter took an on-line course with the University of Kansas. Is that the kind of course you are looking for? I know lots of traditional colleges offer some courses on-line.

I take courses at Southern Oregon University and it's a public 4 year university and their semesters are 10 weeks long (Winter, Spring and Fall) and Summer is 8 weeks long. Schools like this would list their classes as quarter credit hours.

University of Minnesota has a vast online offering. Many classes are self paced so one can go as fast or as slowly as you wish.
I agree, do not go near the for profits.
