Who do you think Cain and Seth and the other offspring of Adam procreated with? Who do you think the "others" were that Cain said would kill him when they saw that God wasn't with him? Beyond that, Cain went and dwelt in the Land of Nod, which would indicate some kind of civilization already existing.
There's a further question of if Adam was created on the 6th day and the creation story in Genesis 2 is just additional detail, or if Adam was created separately from the 6 days of creation ("8th day creation").
Don't know about how animals figure into final destinations, but I agree with you in there being a difference between soul and spirit.
As far as the OP - humans have always been humans, and not mixed breed with animals.
Think about what you said about souls and spirits being uniquely human. If we came from animals, not having souls and spirits as we do - how did we get them?
