Looking to move north of the city in the next year and considering anything from Huntersville to Mooresville (maybe Denver or Concord). It looks like there is a number of new construction areas in Huntersville, but it doesn't look like the school district is the best. I am also very interested in resell value. Are all of these areas appreciating? Can someone give me the breakdown/opinions on these 4 areas in terms of the below?
Resale Value (Appreciating fastly or slow, steady?)
Things to do (Restaurants, Shopping)
School District
Ease to the airport/uptown (limited travel)

You picked a very large area and real estate is extremely specific to location, location, location. While Huntersville through Mooresville is nice and appreciating overall, a good real estate investment gets extremely specific to the neighborhood, street, quality of the house, upgrades, noise level, schools, proximity, etc.... so while those communities are nice overall and appreciating, some neighborhoods will be stagnant while others are extremely desirable.
You also have several school districts lumped in from Charlotte-Mecklenburg, Cabarrus, Lincoln, Mooresville City, and Iredell County. The quality will vary down to the neighborhood schools specifically.

You asked about restaurants in the suburbs of Charlotte? There is every restaurant that is everywhere in the US in the suburbs of Charlotte; and shopping too. It's the same stores that are in every Big Box Shopping Center across the US on every corner in the Charlotte burbs. The area you are looking, North Charlotte, is Big Boxes everywhere and every Cookie Cutter home you can imagine. Do a drive down the streets on Google maps, you will see, even the mailboxes match.

Our neighborhood has matching mailboxes per the HOA.
1- Cornelius has all amenities, good schools, close to uptown and a nice drive when it isn't rush hour. On and access to the lake, good pub and restaurant options, and nicer homes and less snobby people than Davidson, They say that the rich people live in Cornelius and the snobs are in Davidson. Davidson is a very liberal place if you are into that sort of thing. Jetton Park is the best park around.
2. Mooresville, really good shopping and amenities, an old town section, various housing options, lots of traffic, their own school district which is supposed to be excellent, easy access to uptown Charlotte, Booming. About 10 minutes longer drive to uptown Charlotte.
3. Davidson is smaller and not as many amenities as the preceding. A quaint college town that resembles a college town in New England or visa versa. A few nice dining options in and outside and about the same distance from Charlotte as Cornelius.
Huntersville, population near 100K, spread out, lots of options, Berkdale Village for shopping (impressive) has a small "old section," and has a public boat launch and park that is very nice.
To be honest, most of the towns adjacent to Charlotte are nice with good school districts and a huge reduction in crime, however the south side of Charlotte is pretty crime free comparatively. People seek schools in Ft. Mill, S.C., Concord, Denver (don't know about the schools are in Lincoln County.) Belmont, Matthews, and Mint Hill. The home values are going up in all areas. Remember there is only one city in the U.S. bigger than Charlotte where we are outpaced in regards to population explosion, that is Austin, Texas.

Huntersvile, Davidson, and Cornelius are all in the same school district. School assignment can & has changed each year.
Huntersville & Cornelius just got permission by the NC General assembly to operate their own schools for residents of the towns. There is also the highly popular Lake Norman Charter school in Huntersville.
