It depends where you live and what other animals are in your neighborhood. Where I live, there are coyotes and raccoons, etc. - the coyotes like to eat cats - but if you leave the cat outside anyway, this is probably a moot issue. If you have raccoons, they will eat the cat food.
If you don't have such critters about, have a talk with the cat - tell he or she you will be going away but will be coming back, and that a neighbor will provide food and water. You can get a cat cam on Amazon too.
If the cat was a stray when you met, it probably has a lot of survival skills. You can try a timed feeder, set to open once a day at a time you usually feed the cat since he or she will probably be there looking for a meal if you have a time. One meal may not sound sufficient, but it's better than the average stray gets and should sustain them until you get back.
I don't know how long you'll be gone and why you have no neighbors, but if you have a shelter nearby, cat rescue workers are usually very passionate and you might be able to get one of them to come by if you ask. In fact, you can call and ask them the question you're asking us since they'll know your area better and may have some other ideas based on the local wildlife.
If you have any petsitters or even babysitters near you, they would probably come by for a few dollars and put out some food. They could even text you if they see the cat or not.
