I just read an article of three guys setting a new cross country record of 29 hours. The started in New York City and ended up in Redondo Beach California. The article said they averaged 98 mph, going 2800 miles. Kind of hard to believe they could do this without getting caught.

I'd say, it is hard to believe. Have no doubt it is somehow provable and legit.
But I have driven across most of the country (2500 miles one way) 6 times, and did other long runs along West coast. You have to drive non stop for several hrs at 75mph to get to 50 mph average. Plus, there are inevitable pit stops for nature calls and fueling. 10 minutes fueling costs you about 30 minutes on the road. And police, of course.
I'll just shake me head and let it be a mystery. Do I actually give?

It's relevant that they had a specially-equipped car, with a support team outside the vehicle to clear the way.

Meet The Guy Who Drove Across The U.S. In A Record 28 Hours 50 Minutes

They added 44 gallons of fuel capacity to the Mercedes they used for this trip. I read in another article that the cumulative time spent on stops for fuel, etc, was 46 minutes.

If I had to set a speed record driving across America I'd do it with 2 or 3 drivers using a 2014 Town & Country Limited. It has the power to go 100 mph constant and the space in back for a mattress for a passenger to take a nap while the other guys are driving.
