I put this drive in MS Streets and Trips and I put the car's mpg specs in it. Probable cost of gas at $3.91 / gal premium was $578.25 The probable route they took most of the time going from NYC to Denver is I-80, and that highway is just loaded with big rigs whenever I got on it near Chicago.

Not the route at all. Several articles state they went through St Louis, and a few say they followed I-40 out of Oklahoma City.

That would be I-80 to Chicago, where they then followed the modern Interstates that replaced Route 66. From Chicago it's I-55 to St. Louis. Then I-44 to Oklahoma City, I-40 to Barstow, CA then I-15 into Los Angeles.
I appreciate the accomplishment, but for the amount of money they spent I could buy a small aircraft the flies at twice the speed and get across the country in 12 hours.

I don't think they even did that; they left new Jersey on 78, which would put them on the route along the Pennsylvania Turnpike, through Columbus and Indianapolis, then on to St Louis...by sun-up. Also, the route you describe is over 2900 miles, and their trip was 2813 miles.
If I had to set a speed record driving across America I'd do it with 2 or 3 drivers using a 2014 Town & Country Limited. It has the power to go 100 mph constant and the space in back for a mattress for a passenger to take a nap while the other guys are driving.
Their overall moving average was 100mph... That means when they weren't stuck in traffic, near cops they were probably averaging 130+
Maybe 100mph is dangerous, but 75 is typical highway speed in some places.
They AVERAGED 75 mph, which means at times they were going way over that, probably near 130 or more. On public roads where families with kids are traveling that is absolutely criminal. In 29 hours at those speeds they had to have at least a few close calls.

Have you driven those roads? At pretty much all of the times they were driving through a lot of the more civilized areas it was night time with no one on the road other than truckers. 130+ mph running into a trucker isn't going to do much to the trucker.
