You need a lot of space. I would stick with Chevy Express. You want the 350 (5.7 liter). The big engine is more prone to problems.
Look for one well under 150,000 miles. That is when they pretty much decay.
Suburban is also an opton, but they are harder to get in/out less roomy and comfortable and cost more.
If you go Suburban, look for 2004 or newer.
If you deside to pursue Dodge try to find one older than 1990. I am not sure when they started getting crummy. Certainly by mid 1990s. Regardless, you want one with a 318 engine.
Ford made that thing that is a bti bigger than a Suburban, but everone I know who got one - hated it.
If your 6 adults arereally really skinny and you do not bring luggage, groceries or dogs on the same trip with 8 people, you could save some by looking at minivans and/or other SUV/CUVs.
Another possible option is a compeltely rebuilt station wagon from the 1970s - 1980s. The two kids have to sit in the back facing backwards and it is not comfotable back there, but we loved it as kids. As for the front six - certain brands were more comfortable than others.
I believe you can get a Toyota Sienna in an 8-passenger configuration, with seats that are not micro-sized. You have to look for a more basic Sienna, however, to get the 8-passenger configuration as the Limited models have second row captain's chairs. The seats are also of a decent size, though you do have limited cargo capability with all 8 seats in use, so if you need a vehicle for traveling, I would look more to a Suburban, or a Sequoia.

We have a family of 7 plus two giant dogs. We are often looking for big car options. My brother sends me ads for used prison transfer vans. They are cheap, hold a lot of people and come with shackles and a metal mesh divider between the driver and the back.
Do you really like the other 4 adults and 2 kids?
He also sends ads for those airport shuttles. They hold like 20 people. However I am not sure that they can go on the freeway.
There are two minivans that currently offer 8-passenger seating and always have, the Toyota Sienna and Honda Odyssey. The other minivans even in bench configuration were still 7-passenger, with the exception of some now decades old GM minivans.
The Sienna or Odyssey aren't going to be the cheapest options out there, but are probably the nicest options to haul people around. If you want to do it as cheap as possible, you need to look for E150's and/or Chevy Express/GMC Savanna vans.
Outside of the vans there are a bunch of decent SUV's from the Honda Pilot to the Chevy Traverse and its siblings, not even counting vehicles like the Suburban.
