  • Temperature Measuring Devices - Ambient Air and Water
    Observation: No accurate thermometer, capable of reading in the 0-220 F range, could be located in the Jordan 2-door reach-in refrigerator.
    Correction: We require that there be an accurate "display" or hanging" thermometer in all refrigerators, and all freezers. There needs to be a thermometer which reads accurate temperatures in the Jordan 2-door reach-in refrigerator.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Above mechanical dishwasher, the metal, and plastic, surfaces of the counter top, have come loose, exposing rough surfaces that are not resistant to moisture, and are not easily cleanable.
    Correction: This area of the countertop-cabinets unit needs to be repaired, or the counter top-cabinet unit needs to be replaced. We require that all of the countertops and cabinets, in the kitchen areas, including around the mechanical dishwasher, be smooth, resistant to moisture, and be easily cleanable at the bacterial level, at all times. This repair/replacement needs to be taken care of prior to renewal of the permit, on, or before, 31-Oct-2014.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
    Observation: In the kitchen handwashing sink, there was a plastic bag of a sauce being thawed in a plastic container.
    Correction: The handwashing may be used for nothing except handwashing. We need to do everything possible to encourage frequent, and whenever necessary, handwashing. This violation was immediately corrected by the establishment management.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: The cove molding, at the floor to wall interface, to the right of the entrance door to the walk-in refrigerator, has come loose from the wall.
    Correction: This cove molding needs to be resealed, at the floor to wall interface.

  • Single-Service and Single-Use Articles, Use Limitation
    Observation: There was tuna salad being stored in a white plastic bucket, with commercial writing on the bucket saying "Greek seasoning.
    Correction: Only the food which originally came in these white buckets may be stored in these white buckets. These plastic white buckets have been specified to be for a single use only, by the food suppliers. Also, they do not stand up to the rigors of repeated dishwashing. Replace these containers using tupperware, or some other more durable type of container.
