Meat is received, boned, ground and chilled, then combined/mixed with spices and garlic. Next it is sent through a stuffer into casing. The stuffed sausages are refrigerated overnight. The next morning they are turned, cut, packaged, weighed, dated and frozen. The mixing and stuffing process was observed during the inspection. Sanitizer solution measured at an acceptable concentration. Food contact surfaces of the equipment appear clean and dry. A flashlight is used by the producers to view inside the grinder to check for cleanliness inside. The facility is very clean and is well organized. No violations are observed.
