A ROUTINE INSPECTION of your facility was conducted today. Thank you for accompanying me during this inspection as your participation allows me to clarify areas where your processes may require further assessment. Manager was reminded that ice is food and the ice machine has to be cleaned and sanitized on a regular basis.Owner was informed that the broken and cracked areas of the floor tiles need to be repaired within 90 days. - Sanitizing Solution Test Kit Accurate & Used (corrected on site)
Observation: The operator is not testing the chemical sanitizing solution to ensure proper concentration of the solution.OBSERVED THAT THE FACILITY WAS USING QUARTERNARY AMMONIUM SANITIZER AND POSSESSED CHLORINE TEST STRIPS.
Correction: The operator shall be monitoring the concentration of the sanitizing solution using a test kit or other device. DISCUSSED WITH CFM THAT THE TEST STRIP KIT WAS NOT ACCURATE FOR THE SANITIZER SOLUTION BEING USED. EHS PROVIDED A QUATERNARY AMMONIUM TEST STRIP KIT AND REMIDED CFM THAT STAFF NEED TO TEST THE SOLUTON EVERY DAY.
- Clean Ice Bins, Beverage Dispenser Nozzles, Etc. per Manufacturer Specs. (corrected on site)
Observation: Surfaces of ice bins, beverage dispensing nozzles, and enclosed components of equipment are not being cleaned as required. OBSERVED PINKISH AND BLACK MOLD LIKE MATERIAL ON THE INSIDE OF THE ICE BIN ON SURFACES IN CONTACT WITH ICE.
Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) such as ice bins, beverage dispensing nozzles, and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold. CFM WILL EMPTY OUT THE ICE BIN AND CLEAN AND SANITIZE THE EQUIPMENT.
- Plumbing / Maintained in Good Repair
Observation: Plumbing connections under the HAND SINK IN FRONT are leaking. OBSERVED THAT THERE WAS A LEAK IN THE PLUMBING AT THE HAND SINK IN THE FRONT NEAR THE SALAD BAR.
Correction: A plumbing system shall be maintained in good repair. DISCUSSED WITH OWNER THAT ALL HAND SINKS NEED TO BE OPERATIONAL AND USEABLE AND THAT THE LEAK NEEDS TO BE FIXED AND THE SINK MADE USEABLE IN 3 DAYS.
- Physical Facilities Good Repair
Observation: Observed that the Physical structure is not maintained in good repair.OBSERVED SEVERAL BROKEN AND MISSING FLOOR TILES ALONG THE BACK DOOR AND NEAR THE ICE MACHINE AND 3 VAT SINK.
Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities. DISCUSSED WITH CFM AND OWNER, FACILITY IS BEING ASKED TO REPLACE AND REPAIR TILES IN 90 DAYS.

Correction: Food packages such as canned goods shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Return all dented and damaged canned goods to your food supplier for a credit. CORRECTED: CFM REMOVED THE CANS AND DISCARDED THEM.

Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F:OBSERVED THAT THE 3 DR UPRIGHT REFRIGERATOR WAS AT 50F AND NOT HOLDING FOOD AT OR BELOW 41F
Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly.
