Permit displayed. Certified food manager (CFM) present. Previous violations repeated. Deep cleaning needed throughout the facility. Spoke with CFM food safety and general sanitation practices.

    Observation: The door gasket to the food prep units are in poor repair.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.

    Observation: The following utensils were observed soiled to sight and touch: black handled knife and the manual slicer.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: The cavity of the two microwave ovens were observed soiled.
    Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.

    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Less than 10 foot candles of light was noted in the back of the walk in freezer.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

    Observation: Observed broken coving in walk in refrigerator and hand sink at cook line in need of resealing.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
10/28/2014Routine
This investigation inspection was in response to a complaint received on 09/24/2014. The complaint referenced that the men's room sink(s) did not have any cold water and that the water burned their hands.
The following are the findings of this investigation inspection: (1) At both hand sink basins, the cold water was not very cold to touch. When the water temperature was taken the temperature was 106 degrees F. (2) At both hand sink basins, the hot water temperature was taken and was at 106-107 degrees F. (3) When both the cold and hot water handles were turned on, the water temperature was 106-108 degrees F. The water was turned on and ran for several minutes and the temperature was monitored throughout this period. The range of the water temperature did not vary. This inspector observed a sign posted on the mirror in between the two sink basins that read " This Water May Be Hot". The PIC stated that this sign was posted after they received a complaint about the water. This inspector discussed the following with the PIC: (1) The setting of the water heater, (2) Contact a plumber to verify the correct operation and temperature of the hand sink basins. The PIC stated a plumber had already been consulted.

    Observation: Unwrapped or uncovered food in the walk-ins.
    Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings.
  • Temperature Measuring Devices (corrected on site)
    Observation: There was no temperature measuring device located in the bar reach-in.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Gasket for walk-in and prep unit was observed in a state of disrepair and damaged.
    Correction: Repair the gasket to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the gasket, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: Metal drop-ins, potato slicer, and inside microwave.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Fryers, drawer reach-in unit, under the grill, outside of microwaves, ice cream freezer, and prep units.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Equipment and Utensils, Air-Drying Required
    Observation: Metal drop-ins were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: Single service items observed unprotected from contamination.
    Correction: Store single service items in its original protective packaging or inverted in an approved dispenser. Store 6 inches off the floor in the outside storage area.

    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.

    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: All cutting boards are HEAVILY scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.

Chesapeake registered Certified Food Managers' certificates must be posted along with the permit in plain, public view. Health Permit renewal issued.

    Correction: Ensure employees are not wearing jewelry on their arms and hands while preparing food. This section does not apply to a plain ring such as a wedding band.
