    Correction: Provide paper towels at all handwashing sinks.

Recommendations for additional storage:
1) Add a shelf to exiting shelving in the walking cooler and freezer.
2) Add a shelf to the existing right rear shelving in the dry storage room.
3) Add a large wide deep shelving unit between the dishwasher handsink and the prep table with the counter-top mixer.
4) Add a small cabinet or shelving unit at the wall with the exhaust hood switch box.(Check with Fire Marshall first about location.)
5) Add shelving adjacent to the 2-basin prep sink. Recommend moving the prep sink to a corner to allow for a large shelving unit.
6) Add a shallow shelving unit or cabinet on the side of the ice maker facing the office.

    Observation: Cook's thermometer broken
    Correction: unable to recalibrate.
  • Equipment and Utensils - Good Repair and Calibration (corrected on site)
    Observation: The metal stem food thermometers were not accurate in the range of use.
    Correction: Recalibrate the cook's food thermometers to function in the intended range of use.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Dead lamps in walk-in cooler, walk-in freezer, & kitchen ceiling.
    Correction: Replace dead lamps.
