  • Critical: Cooling*
    Observation: spagehetti sause and lasana/pasta noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

equipment and cooking temps are good. Discussed proper cooling techniques and employee health code with the PIC. Discussed replacement of cutting boards in the near future and proper separation of raw proteins with the PIC.
  • Sanitizing Solutions, Testing Devices (corrected on site)
    Observation: The sanitation level of the ECOLAB self dispenser at the 3 compartment sink and the sanitation level in the mechanical warewashing machine was not at acceptable concentration levels. Until ECOLAB can make proper adjustments in the equipment, chlorine bleach is being used for sanitizing in the 3 compartment sink and the dishwasher at a concentration of 50-100ppm.
    Correction: Adjust Quat level in the sanitation dispenser to 200ppm and the chlorine concentration in the dishwasher to 50-100ppm. Notify this office once repairs are made to equipment.
