    Observation: Food stored on the floor or food stored less than 6" above the floor. Hamburger buns stored in the outside walk in cooler were stored less than 6" from the floor.
    Correction: Elevate food storage onto approved shelving with minimum 6" legs or casters. Correct in 7 days.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Sliced tomato and diced tomato cold holding at improper temperatures
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose
    Observation: The handwash station at the front service station is being used for purposes other than washing hands. Sanitizer and wiping cloth observed stored in the hand sink.
    Correction: The handwash facility identified above is to be used for washing hands only

    Observation: A condensate drain line servicing outside walk in cooler was emptying liquid waste directly onto the floor of the walk in cooler.
    Correction: Repair/Relocate the condensate drain line to prevent liquid waste discharge onto the floor surface. Correct in 7 days.

    Correction: Educate employees on proper handwashing and routinely monitor the employee's handwashing procedures to ensure they are effectively cleaning their hands.
  • Critical: Hands and Arms Cleaning Procedure*
    Observation: Improper handwashing procedures observed. Observed a food employee apply soap to one hand and immediately wash it off without scrubbing their hands.
    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and arms for at least 20 seconds and thoroughly rinsing with clean water.

    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: the back of the fryer on the front service line.
    Correction: Maintain nonfood-contact surfaces of equipment clean. Clean within 7 days.
  • Handwashing - Using a Handwashing Lavatory
    Observation: The handwashing facility located at the blender station is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the tray and bottles of cleaner preventing its use. Correct immediately.
  • Critical: Toxics - Storage of Toxic Containers*
    Observation: Containers of cleaner are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.
    Correction: Containers of cleaner must be located in an area that is not above food, equipment, utensils, linens or single service items. Correct immediately.
