    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 10 or less and the water temperature is 100°F.

Educated the pic about wiping cloths and proper storage in sanitzer solution. Floors appear to need some cleaning (not real bad) especially under equipment and in the floor/wall intersection area. The blade on the mechanical can-opener if soiled and needs to be taken apart and wash/rinse/sanitize. Cutting boards have dark staining on them, deep knife cuts- need some attention. Outside areas of refrigs and other equip. (door handles) are soiled where employees put their hands on to open doors and etc. please clean these areas. the wire shelving inside the Hobart refrig in kitchen is rusty and needs to be re-finished.

    Observation: Surfaces of the large can opener blade was in contact with non-potentially hazardous food items that were observed soiled with accumulations of grime and debris.
    Correction: Clean the surface of can opener blade at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the stove in the kitchen has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Handwashing Cleanser - Availability (repeated violation)
    Observation: Soap was not provided at the hand washing lavatory in the kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
