Chlorine concentration in dish machine measured at 100 ppm.

  • Critical: Hands - When to Wash* (repeated violation)
    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated his/her hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Homemade sauces were at improper temperatures: they were using an ice bath that was not up to the level of the food in the containers.

    Correction: Have the license holder require employees or applicants report to the person in charge any information about their health and activities if they are diagnosed with or had a past illness from Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus. Discussed with the person-in-charge and gave him handouts. Will bring Thai handouts during the follow-up inspection.

    Correction: If an employee or anyone in their household has been diagnosed with or had a past illness from Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus they must report it to the Loudoun County Helath Department at 703-777-0234. Discussed this requirement with the PIC and gave him handouts to discuss with his employees.

    Observation: Observed raw shell eggs not stored in refrigeration equipment that maintains ambient air temperature of 45°F or less
    Correction: Store raw shell eggs in refrigerated equipment capable of maintaining ambient air temperatures of 45°F or less.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration: dish machine had no chlorine on the surface of the dishes after the final rinse cycle.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 8 or less and the water temperature is at least 75°F. Immediately discontinue use of the machine until it is properly sanitizing and set up the 3-vat sink to wash, rinse and sanitize the dishes, equipment and utensils.

    Observation: Unnecessary poisonous or toxic materials found in the food establishment: containers of insecticide in storage room.
    Correction: Remove unnecessary poisonous or toxic materials: pesticides and insecticides may only be applied by a licensed pesticide applicator in a food establishment. May not spray Raid inside the kitchen.
