Discussed the observations with the CFM and noted the following: 1. Dispensing utensils with handles in the food on the prep line, this was corrected during this inspection.
  • Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands. Noted employee handling soft shell which was in contact with the employee's forearm above the gloved hand area.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

Discussed the following with the CFM on duty: (1) The cleaning schedule of the reheating staging area. (2) The damage to the wall near the ice machine. (3) The frequency of the certified pest control service. (4) The policy on painted and/or false finger nails. NOTED: Observed good personal hygiene practices during this inspection.

Establishment utilizing proper hair restraints and glove use was observed. No visible signs of pest/rodents in facility. Discussed with Manager that the food establishments permit must be posted for public view as well as the certified managers certificate.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Guacamole cold holding at improper temperatures on prep unit. PIC replaced food item and discarded sauce out of temperature.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: gaskets on hot holding unit, lid of ice bin and inside of deep fryers. Grease and build up causes harboring conditions of pest and rodents and pathogen growth..
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing lavatory in the employee bathroom.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition (repeated violation)
    Observation: Vent filters in the hood system are not being maintained in a clean condition.Observed build up of dust on vents. PIC states individual is coming in tomorrow (every Wednesday) to clean.
    Correction: Maintain hood system vent filters in a clean condition.
  • Mops - Drying Mops (corrected on site)
    Observation: Mops not hung up to air dry. Observed mop stored hanging with mop head facing upward which contaminates handles as it drip drys. Ensure hanging with mop head downward.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
