    Observation: Observed employees or applicants not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food, including the date of onset of jaundice or of an illness due to Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus.
    Correction: Recommend having the license holder require employees or applicants report to the person in charge any information about their health and activities if they are diagnosed with or had a past illness from Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus. EHS provided Form 1B.

    Observation: Observed no sanitizer present in facility to sanitize food contact surfaces.
    Correction: Recommend obtaining sanitizer. After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. PIC had staff obtain chlorine bleach during inspection. EHS assisted PIC with setting up the 3 basin sink

Food suppliers are Richmond Restaurant, Sam's Club, Costco and grocery stores. No food prep observed during inspection, minimal TCS (time-temperature controlled for safety) food present, and no hot foods to temp. Breakfast menu includes sausage, egg and cheese biscuits that are received precooked and reheated in microwave for immediate service. Lunch menu includes chicken salad (commercial), ham, turkey and cheese sandwiches, hot dogs, and cheeseburgers (received precooked, frozen). Discussed reheating and hot holding of hot dogs and chili (commercial). Hot food is discarded at end of day. Discussed date marking (hot dogs, deli meats). Discussed outdoor cooking policy for special events and ensuring grill cover is used and all prep work, including placing food on buns and adding condiments, is done inside in the permitted kitchen. Also discussed posting consumer advisory, if applicable, during special events for hamburgers (rec. raw, frozen and cooked from frozen). Discussed employee health and provided Form 1B. Discussed hand washing and glove use. Reminded PIC that hair restraints are needed during food prep.
  • Temperature Measuring Devices
    Observation: Observed no (working) temperature measuring device located in the reach in coolers and reach in freezer.
    Correction: Recommend providing a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

Only one food handler therefore Date marking is done on a chart versus on specific food items. Discussed menu. Food vendor is Sam's Costco or Food Lion. no changes to menu since last inspection. discussed handwashing, glove use and employee health.

    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: ice machine
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Chlorine sanitizer being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940
    Correction: Utilize only chlorine sanitizer that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces

Reviewed menu. Hotdogs, chicken salad sandwiches, ham and cheese sandwiches, turkey and cheese sandwich, chips and other prepackaged items. During off season sandwiches made daily. during in season may last 2 days. May need to date mark if > 24 hours. New thermometer needed for RIC as not registering properly. 15 degrees observed and EHS thermometer says 3 degrees. Discussed Employee Health, glove use and handwashing.
No violation noted during this evaluation.
