- Food - Standards of Identity
Observation: The food in the refrigerator is/are not properly labeled. Staff foods co-mingled with facility foods, with no labels discerning one from the other.
Correction: Packaged food shall comply with standard of identity requirements in 21 CFR 131-169 and 9 CFR 319 Definitions and standards of identity or composition, and the general requirements in 21 CFR 130 - Food Standards: General and 9 CFR 319 Subpart A - General.
- Temperature Measuring Devices
Observation: There was no temperature measuring device located in the Frigidaire refrigerator.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
- Equipment - Cooking and Baking Equipment
Observation: The cavity of the microwave oven is observed soiled.
Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.
- Plumbing System Maintained in Good Repair
Observation: Plumbing connections under the kitchen sink are leaking.
Correction: Plumbing systems and components shall be maintained in good repair.

- Critical: Demonstration of Knowledge*
Observation: Person in charge of setting up Continental Breakfast unit, Angie Moore, was unsure of procedure for sanitizing utensils.
Correction: Have a certified PIC trained for preparation of the Continental breakfast as soon as possible, no later than 60 days from the date of this inspection.
- Nonfood Contact Surfaces
Observation: The interior of the microwave oven is soiled and needs to be cleaned and sanitized.
Correction: Clean and sanitize the interior of the microwave each morning before the continental breakfast is served and when the continental breakfast is completed each day.
- Kitchenware and Tableware
Observation: Reusable utensils are not being washed, rinsed and sanitized.
Correction: All reusable items must be WASHED, RINSED SANITIZED WITH AN ACCEPTABLE SANITIZER AND AIR DRIED. The test kit for sanitizer is a swimmimg pool test kit and must be replaced with an acceptablr kit. Begin washing, rinsing and rinsing and air drying items today. Get an acceptable sanitizer test kit within 10 calendar days of this inspection.
