    Observation: Employee observed working in the food service area without proper hair restraints. Hair on forehead needs to be restrained.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: Food stored on the floor or food stored less than 6" above the floor. Bulk bags of sugar and flour.;Elevate food storage onto approved shelving with minimum 6" legs or casters.

    Observation: The handwash station in the kitchen is being used to thaw rolls of sausage.
    Correction: The handwash facility identified above is to be used for washing hands only

    Observation: Wiping cloths improperly stored between use. Several wiping clothes lying around at service bar and in kitchen.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

    Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.

    Observation: Metal pither and spoon located immediately adjacent to hand wash sink at front service bar.
    Correction: Need to keep food contact utensils and other equipment out of splash of hand wash sink.

    Observation: No disposable towels were provided at the hand washing lavatory in the service bar in the front.

    Correction: Need get functional thin-tipped probe thermometer.

    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Check and determine from supplier if markings on product called "Savory Egg Mix" indicates pull date - not easily discernable if so. Should have such a product with a pull date.
Information requested: Cooling potentially hazardous foods: 135°F to 70°F in 2 hr. and 70°F to 41°F in additional 4 hr.
Wiping cloth buckets made up and adjusted to 200 ppm QUATS - should maintain this concentration - when reduced then need change with fresh solution at 200 ppm strength.

    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a QUATS test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Equipment - Food Contact Surfaces and Utensils (corrected on site)
    Observation: Pastries being made on food-contact table and then table wiped down with wet only wiping cloth.
    Correction: Need wipe down table that has had contact with potentially hazardous food with soap and then sanitized with wiping cloth with adequate sanitizer (200 ppm QUATS) or equivalent.

    Observation: Several tongs stored within splash of kitchen hand wash sink.
    Correction: Need keep all food-contact equipment out of range of splash from hand wash sinks.

    Observation: Single service items observed unprotected from contamination. At self-service table, the tines of the plastic forks (for customer) are pointed up.
    Correction: Store single service items in its original protective packaging or inverted.
