    Observation: The following utensils were observed soiled to sight and touch: pizza wheel.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: The cavity of the microwave oven is observed soiled.
    Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.

    Observation: The counters in the front food prep area have accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: under counter cooler interior, under icee machine and prep table.

Permit displayed. Certified food manager (CFM) present. Previous violations corrected. Active managerial control observed. Facility organized and clean. Spoke with CFM regarding employee health, food safety and general sanitation practices. Health department permit to be renewed before expiration date of June 30, 2015.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Approximately 15 containers of ready-to drink whole milk was observed cold holding at improper temperatures of 53°F at the time of the inspection. Refrigerator unit observed at an ambient temperature of 50°F. Operator unable to determine the length of time that the food and unit were at this temperature.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Food items voluntarily discarded and removed from unit.
  • Cooling, Heating, and Holding Capacities
    Observation: The one door reach in "Coca-Cola" brand beverage unit was not sufficient in capacity to meet the food storage demands.
    Correction: Provide additional cold holding equipment necessary to maintain food items at 41°F. Improper food storage temperatures are a major contributing factor to foodborne illness.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (corrected on site) (repeated violation)
    Observation: Single service drink holders, take out salad containers and catering trays observed unprotected from contamination.
    Correction: Store single service items in its original protective packaging or inverted in an approved dispenser.

    Observation: Floor wall juncture next to the bread racks is not coved and closed to no larger than 1/32 inch space.
    Correction: Cove floor wall juncture to no larger than a 1/32 inch space.

    Correction: Obtain a Quat test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the prep line are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.

    Observation: Plastic drop-ins were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

    Observation: Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the sink basin.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.
