Maintain corrected items. Monitor the cooling of foods to ensure the food items cool down fast enough. The turn needs to cool down to 41 degrees or less or less within 4 hours after it is made. Make sure staff washes hands between glove use and between tasks. The quat sanitizer was good at 200 ppm.

    Observation: Improper handwashing procedures observed.
    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.
  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: A half eaten cooking was observed on the prep table in back. This practice can lead to contaminate food, clean equipment, utensils or other items needing protection.
    Correction: Provide a designated area where employees may eat so as not to contaminate exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles, or other items needing protection. Cookie was discarded.
  • Cooling Methods (corrected on site)
    Observation: The methods used for cooling were not adequate.Tuna made today was observed stored on line during lunch. This product will not cool down on the line.
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling. Item was placed into 2 containers and moved to walk in cooler.

The purpose of today's visit is due to a complaint, # 37077, of ants all over the soda machine. I spoke to the manager who stated they have had a ant problem at the soda machine. I looked around the soda machine and did not find any live ants. There were some dead ants in the cabinet below the soda fountain. Staff stated that they cleaned the soda fountain area when ever they get a change throughout the day. I did notice some black residue inside the cabinet doors at the base where there is a metal lip on bottom of cabinet door. I did not see any evidence of ants anywhere else in the restaurant. Area manager called their pest control company and was informed they would be out again to work on the problem. Complaint was confirmed. Establishment is working on correcting the issues.

There were no violations noted during today's inspection. The quat sanitizer concentration at the 3 basin sink was good @ 150-200 ppm. Clean establishment.

The quaternary ammonia sanitizer at 3 basin sink was good @ 200-300 ppm. All food temperatures were good. Manager stated that the soap dispenser listed above will be replaced today or tomorrow.
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing lavatory by the 3 basin sink as the dispenser broke off yesterday per the manager.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
