- Equipment - Good Repair and Proper Adjustment
Observation: Sanitizer pump was observed in a state of disrepair and damaged. Pump is pumping to much sanitizer in sanitizer basin of three compartment sink.
Correction: Repair the sanitizer pump to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the sanitizer pump or replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
- Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration. The inspector and operator tested and recorded a sanitizer level of 400 ppm in the three compartment. Operator will manually add sanitizer until the sanitizer pump is adjusted properly.
Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.
- Handwashing Signage/Handwashing Facilities
Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees. Signs are not posted at the employee's bathroom or handwashing sink in the food prep area.
Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.

Observation: The nonfood contact surface of the cabient under the soda dispenser has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: Storage room floor is not maintained in good repair. Inspector noted several missing tiles. This is a REPEAT violation.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Replace missing tiles.

Observation: Food (Box of potato chips) stored on the floor or food stored less than 6" above the floor.;Elevate food storage onto approved shelving with minimum 6" legs or casters.

Observation: The handwashing facility located in the kitchen is blocked, preventing access by employees for easy handwashing.
Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the trashcan preventing its use.

Observation: Handwashing Sink drains very slowly.
Correction: All repairs to plumbing equipment and lines are to be in accordance with law. Properly repair the equipment. (Recommend have a plumber to check it.)

Discussed complaint with person in charge. During inspection there were fruit flies present but no more than could be expected during the heavy fruit fly season. Control measures were being taken by person in charge to minimize the presence of the fruit flies.
