Manager and employees knowledgeable on food safety risk factors and employee health. Employees observed washing hands and wearing and changing gloves during inspection. Foods date marked as required.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the front of the display case (units #1, #2) are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in some of the refrigeration units.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Observation: The cutting board(s) along the front of the preparation display cases are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.

Employees observed washing hands and wearing and changing gloves when handling ready-to-eat foods. Internal temperatures are taken on foods at least twice a day and documented on temperature log. Firm recently remodeled and offering a buy one get one free sandwich for the next two days (very busy) so temperatures on display cases may have been a little high..
  • Hair Restraints - Effectiveness (corrected on site)
    Observation: Two employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles.
  • Temperature Measuring Devices - Food
    Observation: The food temperature measuring device (degrees F) located on the outside of the walk-in freezer is reading minus 40 F and is not accurate.
    Correction: Provide a temperature measuring device that is accurate within +/- 2 degrees Fahrenheit in the intended range of use.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: The floor and wall juncture in back storage area and around the equipment wash sink and mop sink is not sealed.
    Correction: Seal floor and wall juncture in rooms where water flush cleaning methods are used.
