| The above observations and the following were discussed with the person in charge: -Observed two air gaps provided under the 3 compartment sink. The air gap directly under the sink allows water to overflow onto the floor. The air gap at the floor drain is sufficient to meet the need of the required air gap under this sink to prevent the soiled water from backing up into the sinks. The facility can close the air gap directly under the 3 compartment sink to prevent water from overflowing onto the floor, if desired. -Water temperature for the quaternary ammonium sanitizer. | The above observations and the following were discussed with the person in charge: -Employee health policy observed. -All in use utensils are being washed, rinsed and sanitized or changed out at least once every 2 hours. -Quaternary ammonia sanitizer in the sanitizer bucket measured at 200 ppm. Ensure the sanitizer and rinse basins in the 3 compartment sink are being cleaned and sanitized prior to using. Wash water observed to be backing up into these sinks. Ensure all cleaned and sanitized dishes are removed from the sinks prior to emptying. Please contact the health department once repairs to the plumbing have been made. Examples provided. Staff members are doing an excellent job with keeping the kitchen and all equipment very clean, great job!
