Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (repeated violation) Observation: Chlorine sanitizing solution used was not at an acceptable concentration. Could not detect any residual cl strip did not turn color
Correction: Adjust the chlorine sanitizing solution to a level of at least 100 parts per million when the pH is at 10 or less and the water temperature is 55°F.

Pests - Controlling Pests* Observation: Observed numerous amounts of flies in kitchen.
Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
Critical: Toxics - Restricted Use Pesticides - Criteria* (corrected on site) Observation: Store bought bug bombs being used to control flies.
Correction: Utilize restricted use pesticides that meet the requirements in 40 CFR 152 Subpart 1 Classification of Pesticides

Routine
Handwashing - Using a Handwashing Lavatory - No Other Purpose Observation: Need to identify hand sink behind bar.
Correction: The handwash facility identified above is to be used for washing hands only
Lighting, Intensity Observation: Less than 10 foot candles of light was noted in the Walk In Cooler.
Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
Mops - Drying Mops Observation: Mops not hung up to air dry.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
